Carrot, Coriander and Ginger Curry

Carrot and Coriander Curry

Serves 4

Cooking time: 40 mins

Ingredients

  • 400g brown rice
  • 6 carrots
  • 3 red onions
  • 2 cans of chick peas
  • Half a tin of coconut milk
  • Inch and 1/2 of ginger
  • 3 garlic cloves
  • 2 Romano peppers
  • 1 green chill
  • 31 g of fresh coriander
  • 1/2 tsp of turmeric
  • 1/2 teaspoon of cumin seeds (optional)
  • 1/2 teaspoon of fennel seeds (optional)

Method

Put the brown rice into a saucepan and bring to boil, let this cook for 40 minutes. Chop carrots, ginger, garlic, coriander and chilli finely so that the flavours infuse into the curry.  Part boil the carrots for 5 minutes and then remove them from the hob. Sauté the onions and once they begin to soften stir in the chillies, ginger and red pepper. Add a little water, the garlic and turmeric to give the curry a beautiful bright colour and allow the mixture to Simmer for 10 minutes. 

Fry the fennel seeds and cumin seeds in coconut oil or butter until slightly browned (optional) and add the drained chick peas, the rest of the ingredients and the coconut milk. Use the cream on the top of the milk so the curry sauce is deliciously thick. Simmer for 10 minutes. When all the ingredients have softened, season with salt to your own taste and serve with fresh coriander on top!

I love this curry, the mix of spices, red onion and garlic give a beautiful earthy, sweet flavour which enhances the popular carrot and coriander combo! The mix of flavours and textures is just amazing! The coconut milk and chick peas provide a lovely creamy soft texture. The Romano peppers, carrots and fennel seeds give a sweet taste and the green peppers and turmeric give it a spicy edge. Turmeric is fantastic for reducing inflammation in the body, I add it to a lot of my stir-fries and curry’s for this reason!

I often make big batches of it and then freeze some of it or keep in the fridge and eat all week, it is that good!
